What is the difference between ink and toner?

Ink is liquid and used by inkjet printers such as Epson Expression, Canon PIXMA and HP DeskJet. Toner is a fine powder used by laser printers such as Brother HL and HP LaserJet. Ink cartridges cost less but print fewer pages; toner costs more up front and prints thousands of pages.

How do I find my cartridge number if I have thrown out the old one?

Print a supplies or configuration page from the printer menu, which lists the cartridge codes. Alternatively search the printer model, which is on a label on the front or back of the machine, and each product listing will name the printers it fits. Do compatible cartridges void my printer warranty?

No. Under Australian Consumer Law a manufacturer cannot void your warranty simply because you used a third-party cartridge. They can only decline a repair if the cartridge itself caused the fault.
